Smoothies are something I've loved since forever.
Avocados on the other hand, are not.
So when I open the refrigerator door and find a bag full of avocados, do I scream, cry, jump for joy, or suck it up? Hmm, none of the above. I think I'll get creative and make something I actually like with avocados.

This smoothie is super creamy and refreshing! Not to mention sugar free! All the flavors are very yummy and if I don't even like avocados and thought this was super yummy, you should too!
I used pure cream from the cows milk to make it extra creamy. If you're looking for a dairy free version, coconut cream would make a fine substitute.
So if you have avocados laying around on your counter or in your fridge and have no idea what to do with them, I'd say give this delicious smoothie a try!!
Pistachio Avocado Smoothie
1/8 cup pistachios
1 medium avocado
2 tbsp. lemon juice
4 tbsp. maple syrup
1/2 cup cream (any kind will work, I used cow milk cream)
3 ice cubes
In your blender, add the pistachios and blend until a fine powder. A few little pieces are fine. Add the rest of the ingredients and blend until smooth. The longer you blend the better! Pour into your glass and enjoy!
