With summer coming to a close and the garden winding down, fresh dinner choices become slim pickin'. Eggplant for one, had grown wonderfully this year and I have always wanted to try the well know dish, eggplant parmesan. I was glad when working out in the garden to find several more purple bulbs! I know for sure what I'm going to make those into!

Pancakes are one of my favorite things to make on crisp fall mornings. But can you believe I've never made pumpkin pancakes before? I knew it was due time I did as the weather was begging for something warm and pumpkiny (yes, 'pumpkiny' is a word in my book). These are soft and perfectly moist from the pumpkin. They have a slight cinnamon taste, but the cinnamon-maple syrup is really the star of the spices. If you've never made pumpkin pancakes before, you are really missing out! I actually was craving these a few days ago!
I think our Indian Summer might be over! The next few days are supposedly going to be quite cool like today. When the weather turns chilly, I get out my fall recipes and want to bake! This is wonderfully easy and semi-quick to throw together. And it's a crockpot recipe...even better! Perfect to feed a large crowd.
Ahh, one of my favorite ice cream flavors! What better way to send off summer then with ice cream? Some folks consider Labor Day as the ending of summer and the unofficial beginning to fall, just as Memorial Day the beginning of summer. So, what are you going to eat? How's about Cookies 'n Cream Ice Cream? I don't know of anyone who would turn that down! Cause really, who doesn't like Oreo cookies? Homemade oreo cookies!! ;)
