The Chia seed is one of the richest plant sources of omega-3 fatty acids, an anti-inflammatory agent that is good for healthy skin and involved in the cholesterol metabolism function. It is an excellent source of natural antioxidants, protein, calcium, phosphorus, manganese, potassium, zinc, copper, and iron. In fact, Chia contains six times more iron than spinach. Also, it’s gluten free.
Chia seeds have been known to:
increase energy and strength heighten endurance level blood sugar promote intestinal regularity These seeds can be ground and mixed with flour to make breads, but it is not necessary to grind Chia seed as they can be taken whole. They can be added to foods like cereals, juices, broths, salads, and yogurt. Also, Chia seeds will last for years without refrigeration.
Mix together the milk and chia seeds together in a small bowl. Add the rest of the ingredients and whisk together for about 1 minute. Cover let refrigerate overnight. Stir before eating. Enjoy!

You can get SO creative with this pudding! The sky is the limit here as to what combos you can come up with. Here I've given you four basic recipes for you to try, then try some new combos if you want! Experiment with different flavors like Spicy Citrus, Tutti-Fruity, Cinnamon and Spice...you can't go wrong with chia pudding!
Well, the only thing that has turned people off from this pudding is the texture. I honestly don't see what they do, cause I think it's cool! Little jello like seeds all clumped together I guess is how I'd describe it.
But don't let that stop you from trying it!
Since you have to soak the seeds overnight for them to become thick, the pudding is a super easy breakfast food. And super healthy!
You could also mix up a batch in the morning and it will be ready in the afternoon for a perfect snack!

Mix together the strawberry puree and milk. Add the chia seeds and mix well. Add remaining ingredients and mix well. Refrigerate overnight. Stir well before eating.

2 Tbsp. cocoa powder
1 tsp. vanilla
pinch of sea salt
In a small bowl, mix chia seeds, syrup, and cocoa powder until the cocoa is mostly incorporated. Add the rest of the ingredients and mix well. Cover and refrigerate overnight. Stir before eating.
