A friend of mine came over one afternoon and brought a bag of chocolate covered popcorn. However, it wasn't your typical chocolate popcorn. It was gluten free with flax seeds, organic sugar, and oats. So it was like granola clusters with popcorn.
Yeah, amazing stuff.
My friend was shocked to see at least half the bag missing when returning from the other room.

Those crumbs made the most delicious chocolate granola! Once it was gone, I kept thinking about it for days. So I took the bag (yes, I kept the bag. I told you I was in love with that stuff!) and recreated my very own chocolate granola!
I like this best with cow milk. It gives it that classic 'chocolate and milk' feel. But you could easily use any milk to go with it instead, it's up to you.
Another favorite about this granola...it is super easy to make! Throw everything into a bowl, mix, pour, bake, cool, eat!

Chocolate Granola
2 cups old fashion rolled oats
1 cup coconut, unsweetened
1/3 cup cocoa powder
1/3 cup raw honey
2 Tbsp. softened butter
3 Tbsp. + 2 Tbsp. flax seeds
pinch of salt
In a bowl mix everything together except 2 tablespoons of flax seeds. I find using your hands work best. Mix well. Pour onto a greased cookie sheet and bake at 350 degrees for about 30 minutes, mixing once or twice while cooking.
Once cooled, pour into your storage container and add the 2 tablespoons of flax seeds. Enjoy!
