The holiday season is in full swing! Which often times means having overnight guests. Yes, you're thinking, "Serve them oatmeal?!?! You're crazy!" Well, maybe. Or this oatmeal is awesome enough you'd actually want to share with your guests!
My older brother took one bit and said it's more like eating dessert for breakfast! I almost had to agree. It's not like any oatmeal I've ever eaten!
This is sugar free and healthier cause the oats are soaked! I like this in particular cause you grind the oats to a meal. It gives it a different texture then regular oatmeal. You don't have to grind the oats, it's just a different twist.

Cinnamon Roll Oatmeal
2 cups rolled oats
2 1/2 cups WARM filtered water - for soaking
2 Tbsp. organic raw apple cider vinegar
1 1/2 cups filtered water - for cooking
2 Tbsp. organic maple syrup
1 tsp. organic vanilla extract
1/2 tsp. ground cinnamon
1/4 to 1/2 tsp. Celtic sea salt
Cinnamon Topping
2 Tbsp. butter
3 Tbsp. raw honey
1 1/2 tsp. ground cinnamon
Cream Cheese Glaze
4 ounces organic cream cheese, softened
3 Tbsp. raw honey
1/2 tsp. organic vanilla extract
To Make the Creamy Oatmeal
24 hours BEFORE you want to make the oatmeal, add dry oats to a food processor or high efficiency blender and pulse until oats become a powder - about 3 to 4 minutes.
Place ground oats in a quart mason jar or large glass bowl with lid.
Heat 2 1/2 cups water just until warm {do not simmer or boil}, it should be warmer than room temperature, but not too hot to touch. Pour warm water over oats in the mason jar. Add the unfiltered apple cider vinegar. Mix with a spoon and cover the mason jar with a lid. Leave out on the counter {out of sunlight} for 24 hours.
24 hours AFTER soaking the ground oats, dump the oats mixture into a saucepan with high sides. Add 1 1/2 cups water to the pot and whisk to combine.
Bring to a low boil, stirring constantly with a whisk, reduce heat and simmer for about 2 minutes. Remove from heat.
Stir in 2 tablespoons organic maple syrup, vanilla extract, ground cinnamon and sea salt.
Next get ready to top it with the cinnamon topping and cream cheese glaze.
To Make the Cinnamon Maple Sugar Topping
Add butter to a small saucepan. Add raw honey and ground cinnamon. Gently heat over medium low until butter is melted. Stir to combine.
To Make the Honey Cream Cheese Glaze
Add softened cream cheese, honey and vanilla to a mixing bowl. Using a hand-held mixer, whip until smooth and creamy, just a few minutes.
How to Assemble
Place desired amount of cooked oatmeal in serving bowls. Drizzle some cinnamon maple sugar topping on top of the hot oatmeal then add desired amount of the honey cream cheese glaze to the top. Serve immediately and enjoy!
