I love a good chicken salad. It's so simple, yet delish ever the same. However, I do love a good twist on the traditional chicken salad and these Curry-Mango flavors make an awesome variation!
Besides being super yummy, this salad boasts of the flavors of summer. The fresh mango really gives it that feel.
This salad is perfect for wraps, on bread, or simply eaten by the spoonful!

Curry-Mango Chicken Salad
2 cups cooked, shredded chicken
1/2 tsp. pepper
2 1/2 curry powder
1 3/4 tsp. sea salt
dash of coriander
pinch of cayenne
4 Tbsp. mayonnaise
1 cup chopped pecans
1 cup diced mango
1/4 cup dried cranberries
1/3 cup celery, diced
Mix pepper, curry powder, salt, coriander, cayenne, and mayonnaise together. Pour over chicken and rest of ingredients and lightly toss. Serve in tortilla wraps or as a sandwiches.
