Usually, if I'm going to make a cake, I don't use this recipe. Only because when I want to make a cake I find a recipe and make it according to that. But when you make everything from scratch and a recipe calls for actual 'cake mix' what's a girl to do? Make her own!
It's really quite easy to mix up. If you keep it in the freezer, it will last for up to a year!
Use this whenever a recipe calls for yellow or white cake mix and you might never notice a difference! And maybe, just maybe, I have a wonderful recipe the calls for cake mix waiting for you........;)
DIY Cake Mix
2 cups whole wheat flour
1-1/2 cups organic sugar
4 tsp. baking powder
1 tsp. salt
1/2 cup butter, softened and cut into cubes
3 Tbsp. coconut oil
In a large bowl, combine the flour, sugar, baking powder and salt. Add the butter and oil; use and electric mixer (or your hands) to blend them in until the entire mix is the consistency of fine crumbs. Store in the refrigerator for up to 3 months; in the freezer up to a year. Makes 5 cups, equivalent to 1 18oz package.
To make the cake, use a mixer to combine 5 cups of the above mixture with...
1 cup milk
1-1/2 tsp. vanilla
3 eggs
Pour into greased 9 inch cake pans (or a 9 by 13 pan). Bake at 350 degrees for 30 to 40 minutes.
