It was one of those days when the time runs away from you. One minute you are drying and putting away lunch dishes and the next you have a swarm of hungry people wanting to know if dinner will be soon.
That's when I let my brain go on 'free style' mode and use what I have on hand.

This is your basic breakfast casserol, filled with ground beef, eggs, spices and hashbrowns. I like to put the oven on broil and let the top layer of potatoes get nice and crunchy before baking the casserol for the full time.
I make this more often for dinner then any meal, usually acompanied with muffins or yogurt.
If you have a large ammount of eggs to use up as well, this casserol is my first pick.

Egg and Beef Hashbrown Bake
1 lb. ground beef
3-4 large potatoes, shredded
18 eggs
2 Tbsp sweet chilli sauce
1 stalk green onion
1 tsp. smoked paprika
1/2 tsp. basil
1 tsp. parsley
1 tsp. garlic powder
1 tsp. salt
1 tsp. pepper
3/4 cup milk
1/4 cup diced tomatoes, optional
Cook ground beef; set aside. In a large bowl, crack in eggs and whisk. Add the rest of ingredients except for the potatoes.
Layer the ground beef in greased 13''x9'' pan. Pour the egg mixture over top. Sprinkle the shredded potatoes over the egg mixture in and even layer.
Bake at 400 degrees for 35 minutes. Let stand 10 minutes before eating.
