Let me start off by saying my computer was down for several days so therefore you had no new and exciting recipes. That my friends, was out of my hands since I know absolutely nothing about computers. But alas, big brother got things up and running again, so you have him to thank that you have a new recipe today. ;)
This is literally my brother's absolute favorite soup ever! It's crazy. When they see me in the kitchen making soup they'll ask if I'm making Friendship Soup. If I say yes, the act like gitty little girls who get to paint their nails. I am dead serious!
Really, I was thinking about it when I was making this, that it's quite similar to the stander chicken noodle soup. However, I don't know how it tastes SO different and SO good, but it does!
The amounts in this recipe are so versatile it's crazy. You can easily make a huge stock put full for a crazy family like mine or small batch for a couple. So what I'm going to do this time is write out the basic things and let you play around with the amounts. It'll be fun. ;)
Friendship Soup
1-2 quarts chicken broth
5 or so red potatoes, cubed (other potatoes will work too)
about 3 carrots, grated
a good amount of broccoli
two handfuls of corn
2 slices of onion, chopped
garlic, as much as you desire
6 Tbsp. butter
1/2 cup flour
spices (my favorite is just salt, pepper, and thyme)
Pour the broth in a large pot, bring to a boil, and add potatoes. Meanwhile steam carrots, broccoli, and corn.
Melt your butter in a small saucepan and add the onions and garlic and cook till soft. Slowly whisk in the flour. Scoop 2 cups of the broth into the flour-butter mixture and whisk until thick and smooth. Add this to the broth and potatoes.
Add the steamed vegetables to the broth. Add the spices.
