I don't know about you, but it's been quite chilly around here the passed few days! Fall is trying to come early, but I hear it's going to be warm again soon. Either way, the cool weather has me wanting to do some fall baking! My first fall recipe I pulled out this year was a simple cinnamon apple muffin. But boy are they good!
It's one of my favorite muffin recipes! And honestly I don't just make them in the fall cause I love them so much! They are soft and fluffy, filled with fall flavor!
Oh! Oh! I forgot to mention gluten free! Don't shy away from trying these just because they are gluten free. I'm a real GF snob, so if I think these muffins are superb then you will too!
Mmm, just looking at the picture makes me want to whip up a batch right now! I can just smell them baking! I enjoy baking muffins and this one is a true favorite!
6 tablespoons butter
½ cup honey
2 eggs
1 teaspoon vanilla extract
2 teaspoons baking powder
¼ teaspoon salt
1 cup brown rice flour
½ cup potato starch, cornstarch, or tapioca starch
2 tablespoons coconut flour
½ teaspoon baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. ground cloves
1 teaspoon xanthan or guar gum
½ cup buttermilk
¼ cup yogurt
1 cup chopped apples
Preheat the oven to 375 and line a muffin tin with wax paper liners OR oil it with olive oil.
Melt the honey and butter in a saucepan on medium low.
Pour the melted honey and butter into a bowl and add the eggs, vanilla, and salt. Beat with a fork, then add the baking powder and spices and beat with a fork until the baking powder is fully incorporated.
Add the remaining ingredients (except apples) and stir until combined.
Stir in apples.
Spoon into the prepared muffin tin.
Sprinkle with brown sugar and cinnamon (optional).
Bake for 25 to 30 minutes, until a toothpick inserted into a muffin comes out clean (a few crumbs are fine, so long as they don’t smear) and the muffins are lightly browned on top.
