Fall is coming quick! What do you enjoy on chilly autumn mornings?
As I've mentioned before, I struggle making anything with yeast. That would include (sadly) cinnamon rolls. So when I discovered these awesome cinnamon roll pancakes, I knew I had to give them a try! Yes, incase you were wondering, they taste just as good as they look!!
These are not hard or complicated what so ever. The only thing different you do is drizzle over the frying pancake a cinnamon mixture! It smells so good while it's cooking!
If you already have a pancake recipe you love you don't have to use mine to make these wonderfully delicious pancakes! You can simply skip the entire pancake recipe and use the cinnamon mixture part.
I wish I could eat these for breakfast every morning in the fall!
GF Cinnamon Roll Pancakes
For the pancakes:
1/8 cup arrowroot powder
2/3 cup oats
2/3 cup brown rice flour
2/3 cup almond flour
2/3 cup pecan meal
1 tbsp. baking powder
1/2 tsp. cinnamon
1 tsp. salt
3/4 cup water or milk
6 Tbsp butter, melted
2 eggs
1 tsp. vanilla
2 Tbsp. raw honey
For the cinnamon drizzle:
2 Tbsp. butter
2 Tbsp. honey
2 tsp. cinnamon
For the pancakes: Whisk together the dry ingredients in a medium sized bowl. Add the wet ingredients and whisk until just combined. Prepare a cast-iron skillet or griddle.
Meanwhile, prepare cinnamon mixture: Melt the butter in a small saucepan. Add the honey and cinnamon and whisk well.
Scoop about 1/2 cup of the pancake mixture and pour onto the griddle. Spoon about a tablespoon or more of the cinnamon mixture over the cooking pancake. Flip and finish cooking. Continue with the remaining batter.
