I've started a habit of making pancakes for breakfast every Saturday morning. Is that a good habit I don't know, but I do know my dad is loving the results!

If you're new to baking gluten free, you're going to need some staple recipes. Ones that you'll fall back on and know they'll keep your back. This my friend, is one you will want to keep with you.
These pancakes are nice and fluffy and taste great! They cook up beautifully and honestly don't even taste gluten free! I remember when I first started baking things gluten free the actual item came out beautiful, but it always seemed to have a funky taste to it.

Gluten Free Pancakes with Banana Syrup
1/8 cup arrowroot powder (or ORGANIC cornstarch)
2/3 cup oats
1 cup brown rice flour
1 cup almond meal
1 Tbsp. baking powder
1/2 tsp. cinnamon
1 tsp. salt
3/4 cup water or coconut milk
2 eggs
1 tsp. vanilla
2 Tbsp. raw honey
In a medium sized mixing bowl, mix together the dry ingredients until thoroughly combined.
In a separate bowl, mix the wet ingredients together.
Pour the wet ingredients into the dry and mix until just combined.
Heat a oiled cast iron skillet or griddle to medium heat. Using a 1/4 cup measuring cup, pour the batter onto the pan.
When tiny holes appear all over the top of the uncooked pancake, flip and cook until browned on both sides.
Top with banana syrup, enjoy!
Banana Syrup
2 bananas, sliced
4 Tbsp. butter
3/4 cup maple syrup
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Slice bananas diagonally and chop into slices. Fry the bananas in a frying pan with the butter until golden brown. Flip and fry other side.
Add the rest of ingredients and cook for about 5 minutes, stirring gently twice.
Pour over pancakes.
