Between Memorial Day and the Fourth of July is when I love to break out my red, white, and blue dessert ideas! Summer is my favorite season so it's no surprise these are two of my favorite holidays.
A big part of summer is ice cream. With red, white, and blue ice cream I think that hits the spot! Blueberries, strawberries, and vanilla ice cream topped with brownie crumbles, chocolate sauce, and colored coconut...oh man! Awesome!
The brownies on top really make this dessert special. I mean, everyone can layer blueberries and strawberries with ice cream and call it done but not many will think to put the finishing touches of brownie and sauce!
Confession time. You know how I hate using dyes in my food? I caved for this dessert. I ran out of my organic red, white, and blue sprinkles and I was left with white coconut. So I did use some old food dye for the coconut. I just had to! It wouldn't be the same! And doesn't it look perty?

If you're having a family gathering with America colors, or simply feel patriotic, this refreshing dessert is the way to go!
Patriotic Layered Ice Cream
3 cups blueberries
1 Tbsp. cornstarch
1 Tbsp. honey

3 cups strawberries
1 Tbsp. cornstarch
1 Tbsp. honey

1 gallon of vanilla ice cream
Brownies
Chocolate Sauce
Red, White and Blue Sprinkles
In a small saucepan, heat blueberries and smash with a tiny bit of water until goopy. Add the cornstarch and honey and whisk well. Continue heating until thick. Remove from heat and allow to cool completely.
In a small saucepan, heat strawberries and smash with a tiny bit of water until goopy. Add the cornstarch and honey and whisk well. Continue heating and whisking until thick. Remove from heat and allow to cool completely.
To Assemble: Spread 1/3 of the ice cream in the bottom of a 13x9 pan. Spread with the blueberry (or strawberry) mixture. Spread another 1/3 of the ice cream over top of the fruit. Layer the strawberry (or blueberry) mixture over the ice cream. Spread the final 1/3 of ice cream over top. Sprinkle with crumbled brownies, drizzle with chocolate sauce, and top with festive sprinkles.
