Now that you have your very own pumpkin puree, it's time to make something with it! These muffins are one of my fall favorites! Pumpkiny, moist, full of spices and even raisins!
Muffins in general are easy to whip up and these babies are no exception. The cinnamon-sugar topping adds a special touch making these a little more than ordinary pumpkin muffins! I don't bother looking for another pumpkin muffin recipe, cause, really, I love these and wouldn't make anything else!
These muffins and I go way back. I remember being a little kid (little, did you catch that?) and my mom would make these every so often. I remember the house filling with the warm aroma of pumpkin muffins and I simply couldn't wait to eat one! When she'd take them out of the oven and put them on a rack to cool I'd wait till she wasn't looking, grab one and run off! What? They were sooooo good! And even better warm! You'd do that same thing too. ;)
There are raisins in these muffins. Normally, I hate raisins in anything! You will never see me post an oatmeal raisin cookie on this blog. Ever. B.L.E.K. I do however, find them quite tasty in these muffins! Hey, you never said I had to be normal.
Spicy Pumpkin Muffins
3 cups whole wheat flour
1 cup organic sugar
4 tsp. baking powder
1-1/2 tsp. salt
2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. ground cloves
1 cup raisins
2 eggs
1 cup milk
1 cup canned pumpkin
1/2 cup coconut oil
Topping:
5 tsp. organic sugar
1 tsp. cinnamon
Stir flour, sugar, baking powder, salt and spices in a large bowl. Add the raisins. Beat in eggs, milk, pumpkin, and oil stirring only until combined. Fill a greased muffin cups 2/3 full. Mix sugar and cinnamon together and sprinkle over the tops. Bake at 400 degrees for 20 to 25 minutes or until nicely browned. Serve warm!
