Making stuffed eggs is a common occurrence around here. Most likely because my laying hens have gone to town giving 20+ eggs a day.

After eating nearly a dozen stuffed eggs myself, I was looking for something different. Not that I'm sick of the creamy yellow mustard/mayo mixture, just looking for a different twist.

These eggs certainly are different! It tastes relish like, with a little kick, and the taste of avocado. I found them to be the perfect tasty twist!
You might notice that I did not use the egg yolk in this recipe. Whatever you do, DO NOT THROW AWAY THE YOLK!!! That is the best part of the egg and unless you're so allergic to them you might die...don't throw them away!! Please.
What did I do with the yolks?

Stuffed Avocado Eggs
Fills about 6 egg halves.
1 small avocado, peeled and pitted
1 tbsp. onion, chopped
1 tsp. prepared yellow mustard
1/8 tsp. paprika
salt and pepper to taste
3 hard boiled eggs
Put the avocado in a small bowl and mash. Add the rest of the ingredients and blend. Cut your eggs in half and remove the yolk (the yolk is not used in this recipe). Spoon the avocado mixture into you eggs. Sprinkle with paprika, if desired.
