If there's something I love it's quick, easy, sugar free desserts. These truffles fall right under that category, with only three ingredients to boot! They are a nice touch to after any meal when you need just one bite of goodness, or when it's that time of day when you crave something sweet, but don't want the sugar.
Ever opened a can of coconut milk and have no idea what to do with that rich, fabulous cream on the top? This recipe is a perfect use for it!
Fluffy on the inside, crunchy nuts on the outside. My favorite nut to use for the outside is pecans, but you could use any kind you want!
SF, DF, Chocolate Truffles
The coconut cream from a can of coconut milk (about 1 cup)
3 Tbsp. cocoa powder
4 Tbsp. pure maple syrup
chopped nuts of your choice
In a mixing bowl, combine all ingredients except nuts. Whip really well! Once batter is smooth allow to chill in the freezer for a few minutes until able to roll into balls. Once ready, roll truffles in a bowl of chopped nuts. Place on a pretty plate and serve immediately or keep in the fridge for late night snacking.
