Apparently everything is better up river. Never been "up river" but this meatloaf is pretty dang good!
Meatloaf is like chili. Everyone has their own special kind they make and don't ever make ANY other kind. I guess we're kind of like that too, but every once and a while I want to give a different kind a try. I'm glad I did!
This was simple to put together. Well, after I mangled the recipe. ;) THEN it was simple. Yet still super good! I dumped the meat into a pan, shaped it into a loaf, and set it on the island while I finished other things. One of my little sisters stopped and stared at my creation. She said, "That's big. Lots of onions."
Had to laugh. So I left it there seeing if others had a comment.
"That's a big meatloaf!" -8 year old
"Look at the onions!!" -big boy

If you're ever in the mood to try a different kind of meatloaf, I'd say give this a try!
Up River Meatloaf
3 lbs ground beef
1/3 cup chopped onion
1 Tbsp. garlic
1 1/2 bread crumbs
1 Tbsp. parsley
1 tsp. salt
1/2 tsp. pepper
3 eggs
1/2 cup tomato sauce
2 tsp. basil
Have the ground beef thawed, but NOT cooked. Mix all ingredients together in a big bowl until thoroughly combined. You can put in two bread loaf pans or make a long loaf in a large baking dish. Bake at 400 degrees for 45 minutes to an hour.
Combine 3/4 cup tomato sauce, 1 tsp. mustard, 2 tbsp. sucanat, and 1 cup shredded cheese in a small bowl. Spread this mixture over the top of the almost done meatloaf, and allow to bake for 5-10 minutes.
