I used to hate granola. Really.
As a kid, I really despised the stuff unless there were sugar coated clumps and mini marshmallows in the mix. That never happened cause my mom wouldn't allow her children to eat junk for breakfast.
Forward fast a few years. I love granola. My mornings don't feel complete until I have a bowl of my yummy, sugar free granola.

I love the flavor of this granola. Vanilla and spice baby! Cinnamon and nutmeg star in this recipe, along with vanilla, making a delicious mix!
My favorite way to eat this is to just pour almond milk over the top. Or it also makes a tremendous topping to a yogurt parfait!

However you eat it, it tastes amazing! And honestly, it's addicting.
Vanilla Spiced Granola
1 cup chopped almonds
1 1/2 cup pecans
1 1/2 cup coconut flakes
1/4 cup chia seeds
1/4 cup flax seeds
1 Tbsp. cinnamon
1/2 cup raw honey
1/2 tsp. salt
1 1/2 Tbsp. vanilla extract
1/2 tsp. nutmeg
Mix everything together in a mixing bowl. Be sure to mix the honey very well in the mix until the mixture looks like granola. Pour it onto a greased cookie sheet and put in the oven, heated to 300 degrees.
Keep a close eye on it, as it can easily over cook. It takes about 30 minutes to cook. Just know it will look very 'soft' even when it's done. It will harden as it cools.
