Today's been super cold, windy, and dark. Yet, it's been quite cozy on the inside and with a big bowl of this warm, spicy chili it's felt quite warm and cozy.
This is warm, and spicy! Easy to make for a lunch or dinner and I guarantee will be a warm, delicious meal for those cold, windy days.
This is one of my favorite soup recipes I make. It's spicy enough to warm you up, yet sweet enough to make you want to take another spoonful after spoonful! Mmm! I just love it!
This is one soup you are so going to want to make this winter season!
Black Bean and Corn Chili
three slices chopped onion
coconut oil
2 Tbsp. paprika
1 Tbsp. oregano
2 tsp. cumin
2 tsp. granulated garlic
1/4 tsp. red pepper
1 Tbsp. salt
2 15-oz cans black beans, drained and rinced
2 15-oz cans Northern beans, drained and rinced
2 15-oz cans petite diced tomatoes
2 cups frozen corn
4 cups chicken broth
cooked chicken, chopped
Heat coconut oil in soup pan and saute onion until tender. Add remaining ingredients. Bring to a boil; reduce heat to low and simmer 20 minutes. Enjoy!
