Okay, so what's the point to all my rambling?
I have a lot of eggs.
I mean, a LOT of eggs.
Like, so many I'm not even going to tell you how many!
It's that crazy.
Anyway, back to the point.
Before my creative cooking juices kicked in, eggs for breakfast were just eggs. Plain scrambled eggs, cooked to the verge of dry, and drizzled with ketchup. Everyday.
Super boring.
Not so anymore! I don't know what happened, but now that my hens are laying crazy amounts of eggs every day, and usually needing a quick breakfast, I found many ways to make eggs no longer boring!
If you skim down and look at the recipes you might notice that some of them don't include measurements. Yes, I did that on purpose. It's because eggs are breakfast food (most of the time) and most people don't want to be bothered with measuring things when they're still half asleep. To make this easy for you, just use common sense. The recipe says use hot sauce. Do you like hot sauce? No? Then don't put a lot in. The recipe calls for garlic. Do you like garlic? Yes? Then grab an extra clove. Easy as pie.
I'll also note that I didn't use any meat in these recipes. No, we're not vegetarians. I just can never remember to save some meat from dinner the night before. But if you can, then any meat (ground beef, chicken, bacon, etc.) would make a wonderful addition to any of these scrambled eggs.
Here's to no more boring breakfast scrambled eggs!
Spicy Scrambled Eggs
2 eggs
1 tsp. sweet chili sauce
1/8 tsp. cayenne pepper
pinch of salt
some green onion
smoked paprika
cheese
Add everything but cheese to a small bowl. Whisk together and cook in a frying pan. When the eggs are done, scoop onto your serving plate and sprinkle with cheese.
Note: Add some taco meat for some extra weight! Nice and spicy!
Eggs and Chives
2 eggs
pinch of salt
pinch of pepper
chives
Mix all the ingredients together. Melt some butter in your frying pan and cook your egg mixture. Garnish with more chives, if desired.
Note: Even though these are super quick and easy to whip up, they have a great flavor! My sister's favorite!
Eggs with Peppers and Onions
eggs
bell peppers, chopped
onion, chopped
salt
pepper
In a frying pan, saute the peppers and onions until tender. Mix the salt and pepper with your eggs and pour over the peppers and onions. Cook until eggs are set.
Note: These eggs are super good with ground beef, the brother's favorite!
Rosemary and Potato Eggs
Eggs
salt
pepper
potatoes, cooked and cubed
onion, chopped
rosemary
Crack your eggs into a bowl and add your salt, pepper, and rosemary; mix together. In your frying pan, saute the onions in butter until tender. Add the potatoes and saute a minute more. Add the eggs and cook.
Note: Ahh, these eggs remind me so much of Thanksgiving! If you're making a single serving size, you only need a pinch of rosemary, as a little goes a long way.
Veggie Eggs
eggs
onion, chopped
broccoli, chopped
tomatoes, chopped
fresh garlic
onion powder
salt
Melt a spoonful of bacon fat in your frying pan. Add the onion, broccoli, tomatoes, and garlic and saute until tender. Mix the onion powder and salt with your eggs and pour over the veggie mixture. Cook until eggs are done.
Note: I sprinkled cheese over mine. That's an option for you too! These eggs I think are my personal favorite to make as they are SO GOOD.
Tomato and Onion Eggs
Eggs
onion, chopped
basil
oregano
salt
pepper
Saute the onion in bacon fat until tender. In a bowl, mix remaining ingredients. Pour the egg mixture over the onions and cook until done.
Note: Crumpled bacon would be totally awesome in this one!
