Can you believe I've never made a poke cake before? Well, not officially, I've poked my cakes before but it was totally unnecessary. This was one of the yummiest cakes I've made in a looong time! And perfect for this crisp autumn weather too!
It's really not that complicated to make, it just has several steps. This is oh-so-good. Sinfully delicious!! It's (in my opinion) way better then caramel apples!
Dad announced late Saturday afternoon that his parents were coming over for a visit Sunday afternoon. And that means I need to make a dessert. Instead of being utterly annoyed like I usually am, I was excited to try something new! So I created this. Based on a picture I saw on pinterest.

Caramel Apple Poke Cake
2 3/4 cup whole wheat flour, plus 1 Tbsp.
3 Tbsp. arrowroot powder (or ORGANIC cornstarch)
1 cup sugar
1/2 cup dry milk powder
1 Tbsp. baking powder
1 tsp. salt
2 sticks butter, chilled and cut into small pieces
1 Tbsp. vanilla extract
1 1/4 cup warm water
2 eggs
Process all dry ingredients together. Cut in butter until a super fine meal. Add remaining ingredients mixing until smooth. Pour into a 13x9 pan and bake at 350 degrees for 30-35 minutes. While that's baking...
Filling:
2 eggs
1/2 brown sugar
1/4 milk
2 Tbsp. flour
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
homemade chunky applesauce or pie filling
Mix everything together in a small bowl. When cake is done use a spoon, knife, or whatever utensil you want and poke holes evenly across the cake. Pour the filling across making sure it gets into the holes. Spread the applesauce/pie filling over the top. Chill cake in the fridge while you make the frosting.

powdered sugar
Melt the butter in a sauce pan. Add the brown sugar, boil, and whisk constantly for 2 minutes. Add the milk (it will spit and splatter and be loud) and remove from heat. Add powdered sugar until the desired consistence is reached. Pour over cooled cake and chill just long enough to firm up the frosting. You don't want to chill the cake, just cool it down.
Serve with vanilla ice cream!
