Whew! That was hard to type! You try, chai, chia, chai, chia, etc. Hehe, okay. I've posted chia seed recipes in the passed, like different flavors of pudding and even brownies! Oh, those are good. But anyway, I was excited to share this recipe with you cause is feels so much like fall! And if you haven't got it by now, I'm all about fall foods! Whenever I make chia seed pudding I usually make it for breakfast. But this recipe was so yummy I had to save it for dessert! It totally captures the flavors of fall which I love!

If you grow a garden and have at least one zucchini plant you know you will easily find yourself up to your ears in zucchini! You never, EVER get just one, or two, or even just a few....you always get a ton. Always. You can bet on it every year. Well, can you believe my poor little zucchini plants didn't make it? No, I'm not lying. I didn't get ONE zucchini this year. Not one. So when my boss from the CSA farm I work part time at hands me a big, plump, deep green zucchini I was thrilled! I don't think I've ever been so excited for a zucchini in all my life! You gardeners know what I'm talking about. ;) This is the first year I've ever made zucchini brownies. I've made a wide variety of zucchini recipes in the past but when my boss shared these brownies with me and my brothers I knew I HAD to have the recipe! So moist, so rich, so wonderful! You'd never know there was zucchini in them!
I honestly don't know how I started drinking coffee. To much influence from my dad maybe? He seriously treats the stuff like water. Maybe that's why I like it black better then anything else. But every once and a while I do get a hankering for a special, yummy coffee drink. With the crisp autumn air trying to overtake the heat of summer I found this pumpkin latte to be quite wonderful. This is a nice quick and easy thing to whip up on chilly Saturday mornings or on weekend nights when you want something special. Almost like drinking pumpkin pie. Now how can you go wrong with that?!?!
Usually, if I'm going to make a cake, I don't use this recipe. Only because when I want to make a cake I find a recipe and make it according to that. But when you make everything from scratch and a recipe calls for actual 'cake mix' what's a girl to do? Make her own! It's really quite easy to mix up. If you keep it in the freezer, it will last for up to a year!
