Whew! That was hard to type! You try, chai, chia, chai, chia, etc. Hehe, okay. I've posted chia seed recipes in the passed, like different flavors of pudding and even brownies! Oh, those are good. But anyway, I was excited to share this recipe with you cause is feels so much like fall! And if you haven't got it by now, I'm all about fall foods!
Whenever I make chia seed pudding I usually make it for breakfast. But this recipe was so yummy I had to save it for dessert! It totally captures the flavors of fall which I love!
The recipe calls for a cup of strongly brewed chai tea. I used TAZO brand but you could use whatever kind you want.
To make the tea as strong as possible boil some water then measure out one cup. Add one to two tea bags and let that steep until the water is cool and there ya' go!
Spoon into pretty dishes, add a dollop of whipped cream (or maybe two, or three!) sprinkle with pumpkin pie spice, and enjoy sitting outside in the cool autumn breeze!
Chai Spiced Chia Seed Pudding
1 cup strongly brewed chai tea
1-1/4 cup milk
1/2 tsp. vanilla
3 Tbsp. raw honey
3 Tbsp. maple syrup
pinch of salt
2/3 cup chia seeds
Mix all the ingredients together and mix for 5 minutes. It's really important to mix it that long or else you'll end up with gross blobs and you wouldn't want that. Refrigerate for several hours to over night or until thick and cold. Spoon into pretty glass bowls and top with fresh whipped cream and a pinch of pumpkin pie spice!
This makes enough for two to three people, depending on the serving size.
