So I bought two heads of cauliflower on sale over the passed week. Ate the one, steamed and buttered. Nice, but with the second head I wanted something...better. More exciting then just cut up cauliflower with salt and pepper. Well ya'll, I found something amazing!
Fried Cauliflower Fritters! These things are AMAZING! Honestly! You wouldn't think so, but trust me! Almost like a tater tot but way better. Crunchy, cheesy, garlic and onion you would never know there's cauliflower in them! These are seriously addicting. They would make a nice addition to your Fourth of July serving table as well.
These are pretty easy to whip up as a side with dinner as well. Just chop the cauliflower and onions, throw them into your batter and fry. The frying takes a little bit, but SO worth the while! I'm telling ya', these are soooo good!
I grow a lot of things in my garden, but next year I'm seriously going to grow more cauliflower just so I can make these fritters. No joke. That good people.
Cauliflower Fritters
1 cup flour
1 teaspoon baking powder
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
1/4 teaspoon garlic powder
1 egg
1⁄2 cup milk
1 teaspoon melted butter
1 cup chopped raw cauliflower
1 cup shredded cheese
1⁄2 cup finely chopped onion
Make a smooth batter with first 7 ingredients. Mix in next 3 ingredients. For best results, refrigerate for an hour or so (but not necessary). Drop by spoonfuls into hot oil and deep fry til brown and crispy. Sprinkle with salt immediately upon removing from oil.
