You have to have at least one good potato salad in the summer or it just won't be complete. We were having company over and I knew I needed to make a potato salad for the occasion. Though, I hadn't made one in years so I dug through my cookbooks to find a recipe. When I did, I tweaked it to my liking and went to town. Chopping that is. It's amazing what a good knife will make you do.
It turned out amazing. I love potato salad anyway, but this one turned out sooo yummy! Our guests enjoyed it as well...there were no leftovers.
I love this because it was SO simple to throw together, I had everything on hand, and it tasted amazing!

Creamy Potato Salad
8 cups cubed red potatoes
1-1/2 cup mayonnaise
2 tablespoon mustard
4 teaspoons organic sugar
2 teaspoon salt
8 hard-boiled eggs, chopped
2 stalks celery, diced
1 small onion, chopped
Boil the potatoes until they are fork tender. Drain the potatoes and set aside.
Meanwhile, cook the bacon in a skillet over medium-low heat until crisp. Remove bacon with a slotted spoon and place on a paper towel-lined plate to drain. Pour off all but 2 tablespoons of the bacon drippings in the skillet.
Add the mayonnaise, mustard, sugar and salt to the reserved bacon drippings in the skillet and whisk to combine.
In a large bowl, combine the potatoes, eggs, celery, onion and green pepper. Pour the dressing over the ingredients and gently stir to evenly coat. Stir in the bacon.
Cover and refrigerate for at least 3 hours before serving.
