July is here! Do you know what that means? One word sums up July nicely: Ice Cream. Okay, if you want to be technical it's two words, but either way it's ice cream. And what screams summer more then ice cream? Fresh fruit ice cream!
Now don't get me wrong, I adore the chocolate, peanut butter, yummy bits of awesomeness in my ice cream, but there is something I particularly love about this peach ice cream. It's just so fresh and light it has "Summer Treat" written all over it!
Now where I live the peaches aren't in yet, but my friend found some good, organic ones on sale. We ate half fresh then I made ice cream with the rest! Perfect right?
Oh! By the way, I got to show you this! If you listen to country music raise you hand. Okay, there are a few of you, good. So over the holiday weekend I spent the night at my friends farm. Her and I went out to do chores which can take some time with their farm. I was standing, waiting for the water to fill my bucket when she comes around and tosses me a granola bar. Before I could look at what it was, she grinned and said, "I though you'd like this one best. It's the country bar."
I looked down and had to laugh. Does anyone else get this or have I just been attuned to country music and it's changing the way I think? I seriously got a kick out of this!

Okay, okay, okay. Back to the ice cream!
I made this ice cream last year during peach season and I've had it on my mind ever since. The peaches just make this ice cream taste like a frozen fruit pie or something like that. SO GOOD.
Fresh Peach Ice Cream
2 1/2 cup of milk
2 1/2 cup of heavy whipping cream
4 egg yolks
4 peaches, peeled, pitted, and mashed
1 Tbsp. lemon juice
2 tsp. vanilla
Combine the milk and egg yolks in a heavy sauce pan and whisk well. Cook and stir over medium heat about 10 minutes or until mixture will coat a spoon (DO NOT OVERCOOK, or it will turn into scrambled eggs!!). Combine egg/milk mixture with the remaining ingredients in a large bowl and stir well. Cover and let chill several hours to overnight. Pour mixture into freezer section of an ice cream freezer and freeze according to manufacturer's directions. Spoon into a container with a tight fitting lid and freeze one hour or until completely firm. Makes about 16 cups.
