You might be thinking, "Really? A 'how to' on freezing zucchini?" Alas, I say, yes. However, there's more then one way to go about doing that. Method one: Shred zucchini and freeze. We all do this. Easy and simple. Method two: Chop zucchini, blanch, freeze. Still easy, but not everyone does this. Here, I'll help you and make it super easy! STEP ONE: Wash the zucchini. Okay, kind of obvious, but should still be said. STEP TWO: Chop zucchini into large sections. STEP THREE: Chop sections in half, then scoop out any big seeds and stringy fiber. STEP FOUR: Cut the sections into strips, then cubes. STEP FIVE: Blanch cubes in boiling water for three minutes. Might as well enjoy some iced tea while you're waitin'. 😜 STEP SIX: Once the three minutes are up, dump the zucchini into super cold water for just a few minutes to allow them to cool off. STEP SEVEN: Once the zucchini is cooled, drain as much water as you can from them and bag in desired amounts. I bagged mine in 6 cup portions in freezer bags. Then freeze! Wahoo! You just preserved a portion of the harvest! Pat yourself on the back! ;)
