I'm SO excited! Summer is literally right around the corner and not only is summer my favorite season, but with summer comes so much fresh fruits and vegetables! Such as, asparagus.
You might be thinking, "Ew, gross. NO. WAY." I'm thinking, come on! My 8 year old sister never had this before until I made it recently and she loved it! So if she can eat it and like it, so can you! Seriously, this is super good! And you know me, this is super easy!
All ya' got to do is wash the stalks, chop them, toss them, broil them, eat! Seriously, you have no excuse not to try this now. It's to easy for that. And honestly, this is yummy! I'd never make you eat something yucky now would I? No! So ya' better give this a try next time you find yourself with a bunch of asparagus! ;)

Anyhoo, this is very, very yummy. I seriously could have eaten that whole plate. I would have too, if I hadn't made it for dinner. ;)
Roasted Asparagus
1 bunch of asparagus
olive oil
salt
pepper
Wash asparagus and chop into about 1 inch pieces. Throw into a bowl and drizzle about 2 Tablespoons of olive oil over them. May need more depending on how much asparagus you have. You want just enough to coat every piece. Sprinkle a pinch of salt over, and a tiny pinch of pepper, and toss to coat. pour into a cookie sheet and broil for 15-20 minutes. Check frequently to makes sure they don't burn. They will be slightly brown and tender to the fork when done.
