I've never been a big candy maker. Never had the patience nor time. That, and I never thought slaving over the stove for hours just to have a handful of candies seemed worth it. But these? Oh baby. These are super easy and soooo yummy!
If you like store mints even in the slightest, then you'll love these! I'm not a big peppermint fan, but I guarantee you I'll be grabbing these off the serving tray!
Okay, so, I have only one picture for you. Sorry 'bout that. My camera was NOT working with me and my dad was waiting on me. So, camera not working, along with dad waiting on you....not a good combo. So that's why you get one pic.
Anywho, these are pretty simple to make. And you can personalize the taste! Say you simply adore peppermint and you can't find anything pepperminty enough. Then you can add more peppermint to your taste.
I make these for Christmas Eve. Having something special to snack on is well, special. ;) Hope you give these a try!
Sugar Free Peppermint Patties
1 cup unflavored coconut oil
7 Tbsp. raw honey
1 tsp. vanilla
12-20 drops peppermint essential oil
1-1/2 cup chocolate chips
Beat the coconut oil and honey together until smooth. You want NO blobs of anything or you'll bit down on a hunk of coconut oil and that would be, well, gross.
Add the vanilla and peppermint essential oil. Taste as you go to make sure you get just the right flavor.
Put this mixture in the freezer for about 15 minutes to allow it to harden slightly.
Meanwhile, melt the chocolate chips over the stove.
Once the time it up, take the coconut oil mixture and spoon out whatever size you want balls onto a cookie sheet lined with wax paper. I say about a tablespoon size is good.
Press them into flat disks then place them in the freezer for a few minutes to harden.
Once they've hardened, dip them in the cooled chocolate. Don't ask me how to do this. I make a huge mess and use just about every utensil we own.
Place them back on the wax paper and allow them to set on the counter. Or if you're in a rush you can put them in the fridge. Actually, I recommend keeping them in the fridge once they are set. And there ya' go!
