(Yes, you can go ahead and slap me now for posting a baked oatmeal recipe on the second hottest day of the year! I'm making it up to you by this smoothie recipe.)
I don't know about you, but when the thermometer hits 90 at 9:30 in the morning...yeah I tend to freak. Man, it's going to be a hot one! But there are ways to beat the heat you know. Take this Tropical Summer Smoothie for example. Fill a big, cold glass, sit out in the shade on a comfy chair, close your eyes as the warm breeze blows across your face as you sip the tropical flavors of your heat-beating smoothie and imagine yourself on a tropical island. It's not so hot anymore now is it? Or have I just totally gone off the deep end?

This is wonderfully hydrating as well. The chia seeds give you a boost of energy while the pinch of salt replenish your cells. Fruity, flavors of summer! This is probably the smoothie I make most over the summertime. It's just SO good!
Okay, okay, for all you un-imaginary folks who didn't like my tropical island idea. Say your coming in from hours of haying, or riding, or, uh, swimming, and you'd just like something cool and refreshing. This is now your go to!

1/2 a peeled orange
7 coconut milk ice cubes (this is done by pouring the coconut milk in ice cube trays and freezing!)
1 Tbsp. chia seeds
2 Tbsp. real maple syrup
1/2 cup. vanilla yogurt
1 Tbsp. coconut oil, melted
1/4 tsp. vanilla
Pinch of real sea salt
Put everything in a blender except coconut oil. Blend on high and slowly add coconut oil while running. Allow to blend a few seconds more then pour into your favorite, tall glass and imagine a tropical island as you sip!
