Yeah, you'd be making stuffed eggs nearly every day too.
After eating nearly a dozen stuffed eggs myself, I was looking for something different. Not that I'm sick of the creamy yellow mustard/mayo mixture, just looking for a different twist.
What did I do with the yolks?
I ate them.
Or gave them to the curious bystander who wanted a snack.
Please don't think me weird.
Stuffed Avocado Eggs
Fills about 6 egg halves.
1 small avocado, peeled and pitted
1 tbsp. onion, chopped
1 tsp. prepared yellow mustard
1/8 tsp. paprika
salt and pepper to taste
3 hard boiled eggs
Put the avocado in a small bowl and mash. Add the rest of the ingredients and blend. Cut your eggs in half and remove the yolk (the yolk is not used in this recipe). Spoon the avocado mixture into you eggs. Sprinkle with paprika, if desired.
